Hi! I'm going to make a pie chart animation using ellipses/strokes/trim path. I need a small gap between each section (where one section ends and another begins). I tried to use the second stroke below but it expands up and down along the stroke I need this on the left and right sides. Please, see attached image

Layer Styles/Stroke, as Mylenium said.
The only problem with that approach is that each animated shape must be on a different layer.
I you want to do it for multiple Ellipses on a single shape layer, it's a bit more complicated. You need the line that is going to stick to the leading edge of Trim Paths, an offset anchor point for the line at the center of the circle, and an expression that converts the percent of the Trim Paths/End value to a rotation value.
I've done workflows. The most efficient workflow depends entirely on the complexity of the project.
