Since the newest Photoshop update my jpgs are always opening in the Adobe Preview app. When I change the settings in "get info" to always open in Photoshop it immediately converts back to the previous setting. I changed it for a test to always open in Illustrator...which worked perfectly. So something must be wrong with the Photoshop25.app...Any ideas for solving that problem...?

File associations are fixed in macOS, not in Photoshop.
In Finder, right-click a jpeg and use Cmd+F to open Get Info, then select PS from the Open With dropdown. Be sure to choose "Change All" or it will change only the one file.

Thanks @jane-e I tried that already. I now installed the previous version of photoshop (V24)...and it works perfectly. It only has a problem with the V25. Confusing!

The latest installer activity (install or uninstall), will take file associations.
At least that's how it works in Windows, but there's no reason to think MacOS works any differently (after all, that's basically the only way it can work).

I agree that it "should" work. You might try an Apple forum. I remember having that issue once when I installed Photoshop to a folder and not to the default location, on the odd chance you did that. You could also try uninstall/reinstall, but back up customizations first.
The default on macOS is that JPEGs open in the Preview app and that does not change with new installations of Photoshop. I keep it that way, because most jpegs I view come from email and Preview launches faster that Photoshop, and I got annoyed many years ago waiting for it to launch. Does Windows automatically update the JPEG association?

It has always done that for me, all the common image file formats. I never even thought about it.
Those system defaults can easily be changed in Windows, but for me that hasn't been important or needed.
