Not sure what you need. Do you understand that there are two different ways of adding horizontal text in Photoshop? Here's how: Add point text (to add a few words like a heading or title) or paragraph text. Point text: Click anywhere on the canvas and type the text. Briefly, you optimise your raster images in Photoshop and then Place them as native PSDs in InDesign where you add your text and background colours. You can "round trip" between InDesign and Photoshop to make further changes to the images. I suppose it's to make the PDF export easier to manage, in the sense that if you had say a 200 page book, without the folder,  you would have 200 individual files on your desktop, or wherever you saved them, which would perhaps be messy. ... View more

You're new to InDesign, which is a complex application with a steep learning curve and you're creating a Reflowable ePub – a format that's not at all intuative. I suggest you keep your document simple and have the captions under the image perhaps in a smaller font and/or in italic. (Remember, no folios, anchor all images, Parent page contenet in not implemented and use Paragraph and chracter styles in Reflowable ePubs.)
