When you create Outlines of your text you then lose full editability therefore if you want to change the fonts size, banding, length... you would not be able to do so with the Type character palette for example. I am not sure if I am understanding your question. Do you have any visuals you can share?

You can select all the paths and Goup them: Object > Group. After you group them you can edit them by double clicking on the group and going into isolation mode. You could also select all and turn the paths into symbols. Then edit the path in the same way.
