I hope I understood your problem correctly. You can create a new character style with the only property "Bold". (No text/textframe selected!) IF the font family's meta-informations are properly set by the font designer, THEN select the character(s) > click the "Bold" character style > InDesign applies the matching bold font face, if available. If not available you get an error message and the background is dyed pink. All this is independent of the displayed font name. This is not the way how InDesign works. In short: You have to define a list (menu Type) > this is mainly just a name and two options. Then create as many paragraph styles as you want to have levels, say "level 1",  "level 2" and so on with all the indents, bullets, tab positions. When writing the list items apply the appropriate level. Read the details in the help file "Create multi level lists". NOTE: Bullets are not supported with multi-level lists. But you can do it this way: Creating the paragraph styles, set the list type temporarily as "numbered", now choose the list name and the level number, and then set the list type back to bullets. #2 It is the same situation as in #1 described by Jongware - though it's not common to group different dingbat fonts in one font family. Traditionally the font faces regular / bold / italic / bold-italic are grouped and with the right meta tag still more than just these. No, they don't fight among themselves (LOL) as long as they are different fonts and not the same font(s) in different font format(s) or duplicate font Files & names with slight internally differences. These thoughts come to my mind: a) It's the Publishers fault. I've got the old Publisher 2010 and it makes exactly the same mistakes in the assignment of the font weights to the font names. Microsoft has never done much for the development of Publisher. b) I don't know if you are used to the "B" and "I" buttons for to get the bold, italic and bold-italic font faces. They will never be listed in the drop down font list. By the way, it's the same in my Microsoft Word 2010. c) Anyway I see no way to resolve this issue than using the reachable fonts or another font family. The help file lists 2 options: a) Menu Type > Create Outlines (bad!) b) Same menu, press the Alt Key (Windows)/ Option key (?, Mac) and choose Create Outlines . Start with a tutorial for glossy buttons. On a new layer apply a hatches brush stroke or hatches pattern / lace pattern / line art pattern, you'll find a huge selection online. Or draw a pattern of your own with an 1 px pencil. With a layer mask you can hide parts of the pattern without deleting them (black = hide, white = show) For the menu lettering use a so called pixel font / bitmap font, (examples here).
