How to delete middle anchor point without losing path shape?

Say you have a curved path, just a 'u' shaped curved path. There's 3 anchor points in that path, 2 at the ends and 1 at the middle.How do I remove the middle anchor point without changeing the shape of the curved path?

How do i properly allign anchor points onto the edge of the shape?

I am having trouble getting the anchor points to allign with the edge of the shape per my professor’s instruction. Is there a step missing? (see the professors video and my video for comparisions.) Link to the professor’s video:

Option to keep Pen/Path tool active during zoom adjustments
