well, it has some extra small details which become invisible in such a small size. When your details are too small, you can't use them on screen because the details are smaller than screen pixels. And you can't even print or cut them for the same reason.
Try to save a copy to keep the original. Then in the document delete too small elements and unite the details that "ask" for this (e. g. are placed too close to each other).
The smaller size of the object — the simpler its shape.

did you try to choose them in the Window menu? You can find "Toolbars" in the top section of the menu and "Libraries" in the main section, look somewhere in the middle.

Well, Illustrator is still not as good with text layout as InDesign 🙂 and does not have the Character styles for bullets. The only way that I could find for a moment is 1. Create the character style with the needed color.
2. Create a Paragraph style for the bulleted list and apply it to the text.
3. The most interesting: the bullet takes the character style from the first letter of the paragraph. So, if you add, say, the Hair Space at the start of the paragraph and apply your char style to this space, you will get the bullet with the needed color! 🙂

1. It looks like shown in the Outline mode. It does not show the lines as smooth but follows the monitor pixels without any anti-alias.
2. Your monitor concocts of pixels, and you will see them id look carefully at any vector image on the screen. But the good news is that your vector's pixelization will never be bigger than the screen (or printing device) own pixel resolution.

Please, show some references of the needed realistic level. As Illustrator is a vector graphic program, any artwork will be more or less stylized. The more realistic, the more work to achieve it. In your case, I would start by using some gradients to simulate the volume. Then show the result here to find more tips.

A brush is a grayscale thing, it can't have its own color. But you can try to change the appearance of the brush tip contour. Open Edit > Preferences > Cursors and experiment with the settings.

Some tools are hidden in the primary mode just after installation. Try to do the following. Click on the "Three points" button at the bottom of the Toolbar. Then call the panel menu (the hamburger at the top-right corner) and select an "Advanced" option. You'll see all tools.

You can use perspective during creating your 3D as Ton says or create a Blend object with a Smooth Color option from large to small stars. The last way allows you to control the extrusion depth easily and change the sizes of starting and final objects at any moment.

As far as I can see from your image, Barbara's advice is the best. The "Minus front" action is the easiest and fastest way to achieve your goal. I would only add a small preparation step: decrease the size of the burgundy object a bit (1-2% is enough) to ensure that its edges are strictly inside the white area.

The lights have a Screen mode which works when something is placed under them. So you see the mess when nothing is under the lights and a good look when your photo is in its place. But no all printing modules work correctly with the blending modes, so you have this mess on the last image. If you printed it on the usual desktop printer, it was expectable. So the easiest, fastest, and best way to solve the problem is to follow Monika's recommendation.
Another way is to select all lights, and change their gradient end stoppers to the same color as a start one (or the nearest on the gradient line) and 0% opacity. In this case, you can change the blending mode to Normal. But I'm not sure that you need so deep editing 🙂

sometimes when I work with quite a complex path, I create it in Illustrator and copy/paste it to the shape layer. Illustrator reverts the path direction with one click and moves the first vertex to the other end of the path.

the thumbnail is a part of the layer name (color for the solid, soft icon for imported images, special marks for different layer types, etc. So if your idea allows it, you can pre-compose it and work with the composition instead of the solid layer 🙂

If you convert the text to outlines it is not the text more but the set of shapes, so the users can't copy and use it.
But webmasters don't add the AI files to the sites, they add texts and images, and do the final aligning in the site constructors or HTML editing soft. If you want to have the perfectly aligned and available for use text on your site, you have to create the background (without text) as an image and add the text in the site construction using its tools. Some of them allow precise aligning, some don't. It depends on your editing system.

Now it's not ready for sale.
That's what you could do:
1. go to the nearest real cactus and draw it from some different directions to find the best and most impressive look.
2. Scan the draw to have it as a template.
3. Do some research to find the stylization. Creating the photo-realistic images in Illustrator is possible but takes much time and skills, it's not for beginners. And anyhow the vector images generally look better when they are stylized. But "stylized" does not mean "look like a 5-year-old child's drawing". So try to find a nice style for your art.
4. Practice using the Pen tool and understanding colors, fills, and strokes.

Why do you have to create separate docs for each plate? Do you need to print the usual CMYK separations? Does your printer allow you to print the plates separately? If you need to print the final colors (e.g. red, violet, etc.), did you try to set each color as Spot (e.g. Pantone Solid Coated)? These colors create their own plates and you can just print each plate separately, not create the new doc for each color.
And yes, the last 10 feet of the roll may be phisically stretched during printing (and paper also but paper sheets are generally not so big and we don't notice the deformation).

If you don't want to lose the shapes as separate objects, you can group them and add the gradient using the Appearance panel.
1. Create the needed gradient (you can do it any moment by I prefer to prepare it before the Appearance changing). Add it to Swatches.
2. Group the shapes.
3. In the Appearance panel add the new Fill.
4. Choose the gradient in the Fill swatches box.
You can create and apply the gradient even without preliminary creating the swatch, just open the Gradient panel when the new fill is selected and adjust it as you want.

The selection color is just highlighting, it does not affect an image. You can control it with the Layers panel. The easiest way is described by Carlos — double-click on the layer line in the panel and choose the new color. You can also create a new file and put some content there, and it will have another highlight color. It's just a way to visually organize content, nothing more.

1. Try to set the stroke of both objects as None and then set it 1 pt again.
2. Check the stroke properties: it might have the brush applied (Art brush or Calligraphic brush), or the Width profile. They can set their own dimensions.

If I understand you well, you have the stroke at the edges of artboards. How is it aligned? If it's "centered", its width is partly out of the artboard and changes the whole size.

1. Does ANY image look distorted? On your preview the background looks much better than the watch. Are they different files? If yes, may it be that you edited the watch and did not update the link?
2. What is the original files resolution?
3. Another stupid question: this banner does not have many vector elements; maybe would be simpler to create it (and the similar ones) directly in Photoshop?
