Paragraph Rules - rule above and rule below, will handle this quite neatly. Rule above is set to Column Width, and Rule Below (in Paper color) is set to Text Width (this covers and obscures the black rule), with Left and Right Indents to offset the rule from the text.

Once you have created the logo, you are free to continue using it. Outlining the font ensures that it will keep its look once you don't have access to the live font. You are allowed to use the logo created with the font; you will not be allowed to use the font to create other text.
And you will need some other layout software to create your letters, flyers and business ads.

Seach for Script fonts -- there are a lot of options.
If you are hoping for readabilty, please don't use this sort of font in all caps. They are not designed to be used that way.

You can save the logo as a PDF, tiff, jpg, png or other graphic formats, and place in the layouts made with non-adobe software. If the fonts were from the Adobe collection, be sure to have a version of the logo with fonts outlined. (This is a good idea for logos, regardless of the source of the font)

Can you use a different font for the headers, or is this set in stone, stylistically?
It seems like a bug report is in order, maybe? But maybe not - since the issue seems to be with the fonts, and not with InDesign.

In working with your document, the issue seems to be tied to the font you are using.
When I changed the font, some worked properly, and others showed the same problem you are seeing.
Based on my small sampling: True Type fonts that I tried worked; Open Type and Adobe Cloud fonts that I tried didn't.
Edit: more testing - some further cloud fonts I tried worked correctly.

You can do this without cutting the shape. Make a gradient with the color stops on top of each other - set its angle to 90° -- adust the stop position(s) until the line is where you want it.

There is a setting on the clone tool. Look at the top of the page with the clone tool selected, and click the checkbox for Aligned.

It sounds like either you are adding your text on a layer below a page-sized object on some pages, or there is a text wrap applied to a background images on your problem pages.

The three separate programs exist because each has its own purpose. To give each one all of the capabilities of the other two would 1) remove the reason for having three different programs, and 2) Make the resulting single program so complex that it would be slower and less useful that the three individual programs that work together.

As it is now, the programs are barely compatible, and this has been the case since the existence of both programs.

The programs are completely compatible - they don't work the same way, and they don't perform the same tasks. If they did, there would be no need for separate programs.
Layout shlould be done in InDesign, with placed pixel images from Photoshop, and placed vector images from Illustrator. This has been the case since the existence of [all three] programs.

To keep InDesign table formatting, everything needs to be set in Styles - Cell Styles, Table Styles, Paragrapgh Styles and Character Styles. This way the styling will hold when you update the excel sheet.

Spell check language is not global -- it is determined by the Language applied to the text itself.
If you have used styles, check the Language in the paragraph- and character styles.

Set up a graphic style with a black (or color of your choice) fill, and white outline behind the characters.
Select the rest of the text and apply the style.

Open the original graphics for Chicken and Veggie, and check to see if the white is set to overprint. (Illustrator usually prevents this from being set, but it the art was originally another color, and set to overprint, the overprint setting would stay if the art was changed to white.

Dad wouldn't buy a color TV as long as the B&W set still worked.
My dad was "waiting for them to perfect the technology."
They didn't get color TV until the 1980s, when we (their adult children) finally got together and bought them one.
As kids, the iconic b&w to color scene in the Wizard of Oz was completely lost on us.

I don't know the reason behind it, but when you resize the mapped art to only the highlighted section of the pane, it shows in color; when it is stretched to the whole frame, it goes to grayscale.

The non-printing layer you have set up will be present on your Parent Pages - you can add your grid there, and it will show on all document pages. (you will not see it in the layers pallet on those pages, however.)
